Getting ready...

I'm writing as I sit waiting for Noah to get his hair cut, which he was whining and throwing a fit about all morning. I'm trying to get my family on the road to Austin for my nieces graduation from UT Austin! I'm so proud of her and her college years have just flown by. She is a amazing young woman and she us going to be a fabulous teacher... Can't wait to see this new chapter in her life unfold....

Tonight will live in my heart...

Time to share a mommy moment, I am so very proud of Noah... It was his first playoff game for the baseball season and although the Redwings lost and played their last game of the season... My Noah played the game if his life! It was truly one of those moments parents live for! Down by two in the fourth inning with two outs my baby was up to bat and I literally felt sick, on his last ball he hit a home run, brought in two runners and pulled them one run ahead... I can't even talk about it without tearing up, so proud, and I just know my dad was hollering up in heaven!

Well hello there Mr. Rain!

Harpo, Harpo...  get down off that roof it's fixin to pour down on your head....

And has it been pouring down, all week, we sure do need it though so no complaints from me!!!  It amazes me how people do not like the rain, Noah does not like the thunder but even the rain seems unexciting to him.  I told him this morning that when I was a kid the rain was a signal to run outside not inside!  That was our version of a waterpark and living at the bottom of a hill made for some fun rides...  We had a blast playing outside, we were always outside...  and NOT just because my mom locked us outside while she cleaned... LOL...  times sure have changed, now it's a task to get kids outside...  the good old days for sure!

Where am I?

We have been super busy lately, yes, I know we are ALWAYS super busy...  I am seriously trying to get more organized and the more I try the crazier my life seems to get.  But it is a good life and for that I am truly grateful.

I have a lot on my plate these coming months and I am going to struggle to keep things balanced.  I am so looking forward to the summer with my baby and I don't want to let the time zoom past me.  He is growing so fast and time is so precious because he won't want to hang out with his Momma much longer, I can't even think about it without crying...  So, I'm making the most of every moment...

I am on team for the Women's ACTS Retreat and we have started planning for the church festival...  I think it's going to be a busy but AWESOME summer, plus, we finally got our pool to put out!  yippee!!!

First Grade Mass

Here is my little sugar doing the reading at the mass, it never ceases to amaze me how I can fall in love with this kid a million times over and over again...


They acted out the Gospel and my baby played Jesus...  in his cons...  did a great job...

I'm so proud of my little guy and the wonderful man he is becoming....

Chili Relleno's

Here they are, my husband loooovvvveeeesss these, and when I'm home all day I like to cook them a really good supper, but this one is a special treat!  I truly probably make these once a year because they are so much work.  I learned to make these just from memories of my Mom making them, I never actually helped her do them, but I tried it and they came out wonderful.  

You have to toast the poblano peppers, so i start in the morning toasting them in a pan turning them so that all the sides get nice and toasted, then when that is done, I slice it along one side and take the seeds out, I usually wear gloves because some of the peppers can be hot (which I love).  My mom would peel the outside off, I do sometimes, but my husband loves that toasty taste so I leave some of mine on there.

 in the meantime i have browned hamburger meat and grated the cheese for filling.  then you use toothpicks to hold them shut.  

But.... your not done yet, then you take eggs, separate the yokes from the egg whites and beat the egg whites until they are nice and fluffy, when they are, you can add the yolks back in and a little salt.  THEN you take a chili relleno, dip it in the egg and coat it, set it in the pan to fry until egg is cooked...  it is a pain because you have to be gentle with the chilli so it doesn't open up and then even with the egg so that it doesn't fall off when you flip it to cook it...

They are a lot of work, but it makes my honey happy....
